  1. Bean Burgers with Avocado Basil Cream

    Adapted from How Sweet It Is

    Bean Burgers:
    1 (15 oz) can black beans, drained and rinsed
    1 (15 oz) can cannellini beans, drained and rinsed
    1 large egg + 1 large egg white, lightly beaten
    1/2 cup panko bread crumbs
    2 Tablespoons olive oil, divided
    4 garlic cloves, minced or pressed
    1/2 teaspoon smoked paprika
    1/2 teaspoon onion powder
    1/4 teaspoon salt
    1/4 teaspoon pepper
    4 whole grain buns, toasted if desired

    Avocado Basil Cream:
    2/3 cup Greek yogurt
    1 avocado, chopped
    10 medium basil leaves, chopped
    1 Tablespoon lime juice
    1/4 teaspoon salt
    pinch of pepper

    Directions:
    1. To make Avocado Basil Cream: Add basil and avocado to a food processor, blending to combine. Once somewhat smooth, add in Greek yogurt and lime juice and blend again until combined. Add in salt and pepper, taste, and season more if desired. Refrigerate until ready to use.


    2. To make burgers: In a large bowl, mash beans with a potato masher or fork. Add in garlic, paprika, onion powder, salt and pepper, mixing to combine.


    3. In a smaller bowl, lightly beat eggs and add in 1 tablespoon olive oil and panko, stirring to mix. Add the egg mixture to the beans, and mix thoroughly to combine, bringing it together with your hands if needed. Separate the beans into 6 equal sections and form patties.
    4. Heat a large non-stick skillet over medium-high heat and add 1 Tablespoon olive oil.

    Add burgers and cook on each side until golden, about 5 minutes. Remove and serve with avocado cream on whole wheat buns! Serves 4.

  2. Cheesy Stuffed Meatball Sliders

    Keenan hasn’t made a blog appearance in a while. So here he is – waiting outside the kitchen for any food to accidentally fall :)

    Ingredients

    2 pounds lean ground beef
    1 egg
    2 Tablespoons olive oil
    ⅔ cup romano cheese
    4 garlic cloves, minced
    2 teaspoons dried basil
    2 teaspoons dried parsley
    ½ teaspoon salt
    ½ teaspoon pepper
    ⅓ cup panko bread crumbs
    4 ounces of mozzarella cheese, cut into cubes
    3 cups of your favorite pasta sauce
    15 slider buns (or dinner rolls if you cannot find them)

    Directions

    1. Preheat oven to 400°
    2. In a large bowl, add ground beef, egg, oil, cheese, breadcrumbs, garlic, salt, pepper, basil and parsley. Mix to combine, gently tossing a few times with your hands. Don’t overmix – it will result in tough meatballs!
    3. Spray a large baking dish with non-stick spray and add pasta sauce. Roll beef into golfball-sized meatballs (about 3 tablespoons of beef), and press a cube of mozzarella in the middle. Seal the beef around the cheese and set in sauce.
    4. Bake for 30-35 minutes or until meatballs are cooked through. Serve with additional sauce if desired, toasted slider buns, and a few slabs of mozzarella for topping. Makes 15 sliders.

    Taste Test

    I brought these to a football game party a few Sundays back and I thought they were really good! The meat was a little tough so I think I mixed the meat mixture a little too much but the flavor was awesome! Perfect party food to bring!

  3. Bleu Apple Turkey Burgers

    Wholesome Mom and I went out for lunch at this fantastic organic restaurant a few months back. She got this fabulous turkey burger and I knew it would be easy to recreate at home.

    I was right.

    Bleu Apple Turkey Burgers
    Inspired by Prasino Restaurant

    1 pound ground turkey
    1 (1 ounce) package dry onion soup mix
    1/2 teaspoon ground black pepper
    1/2 teaspoon garlic powder
    1 1/2 tablespoons soy sauce
    1 egg, lightly beaten
    2 Tablespoons olive oil, divided
    1 onion, cut into strips
    1 green apple, sliced thinly
    1 cup baby Spinach
    1/2 cup bleu cheese crumbles
    4 hamburger buns, toasted

    Directions:
    1. In a large bowl, mix the turkey with the onion soup mix, pepper, garlic powder, soy sauce, and egg. Refrigerate the mixture about 10 minutes, then form into 4 patties.
    2. Preheat the pan for medium-high heat and add in 1 Tablespoon olive oil. Place the patties on the grill. Cook for 20 minutes, turning once, or until well done. The inside of the burgers will look whitish in color when cooked through.
    3. In a separate skillet, add in the remaining 1 Tablespoon olive oil. Sautee onions until caramelized - about 10 minutes. Remove and set aside. Add apple slices into the same skillet and cook until softened.


    4. Place turkey burger on toasted bun, add on top cooked apples, onions, bleu cheese and spinach! YUM! Serves 4.

    Nutrition Notes: Blue cheese is a strong flavored crumbly cheese that has shades of blue due to its aging process. To get bleu cheese to that blueish color, the curds are crumbled, salted and then they add the peniciullium. Yes, this is the same thing that is used to fight off infections in people. For bleu cheese, this is the blue-green mold that actually creates the flavor and the color.

    A serving size of any cheese is 1 oz., which is about the size of four small dice. This may seem like a small amount but because of its strong taste, it does not take much blue cheese to enjoy its flavor. Blue cheese is not a reduced fat cheese and has about 5 g of saturated fat per serving and saturated fats should be limited to less than 10% of total daily calories.

    Taste Test: These were the best turkey burgers I’ve ever made! The apple, the spinach, the bleu cheese — amazing! I’m usually not a huge fan of fruit paired with savory dishes, but this was so good!
