Banana Oatmeal Peanut Butter Muffins

I need a banana intervention.

My freezer is loaded with ripe bananas just waiting to be blended for banana soft serve, banana bread or something wonderful like Banana Oatmeal Peanut Butter Muffins!

These muffins have a long name but they are loaded with fruit, peanut butter and oatmeal and so delicious! You probably already have these ingredients on hand so make them this weekend!

Ingredients

1 cup all-purpose flour
½ cups whole wheat flour
½ cup sugar
½ cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 cup rolled oats
½ cup creamy peanut butter
½ cup butter, softened
2 eggs, beaten
2 very ripe bananas, mashed

Directions

1. In a large mixing bowl combine flours, sugars, baking powder, soda and oats. Stir to make sure all combined.
2. In a separate bowl combine peanut butter, butter, eggs and bananas. Add to dry ingredients and stir until just combined.
3. Spoon batter into paper lined or greased muffin tin until two-thirds full. Sprinkle some rolled oats on top of each muffin.

4. Bake at 350 degrees F for 18-20 minutes until done (test with a toothpick – should come out dry when they are done). Cool completely. Makes 12.

Taste Test

Perfect dessert or breakfast muffin! The combo of bananas and peanut butter is always great but when you add in oatmeal – it makes it even more delicious (and healthy)! Enjoy!

      and with I made 12 muffins, and the rest of the batter i made cookies, which turned out just as good, and i did use all whole wheat flour and splenda instead of the suger and brown suger…
